I'm Karen Jungman, county Extension agent with Texas A&M AgriLife Extension Service, and I'm going to show you
today a quick, easy, healthy meal that you can make for your family.
Today I'm going to show you how to make Cajun Shrimp and Rice.
First, we're going to turn on our electric skillet to about 325 degrees.
We're going to add a tablespoon of oil, and in this case
I've used olive oil. We have a cup
of onions, a cup of celery,
and 2 tablespoons of garlic.
I'm going to stir this around until they
become tender or translucent in color. This
usually takes about 3 or 4 minutes.
Once the onions and celery are tender, we're going to add 2 tablespoons of
Cajun seasoning. Now, this Cajun seasoning can be quite spicy, so you may
want to adjust that for your family. We're also going to add a pound of
frozen, deveined, and peeled shrimp.
Now, with your shrimp, you're going to want to cook those
until they turn pink in color, and it usually takes around 3 to 5 minutes.
So, you're going to stir those around until they begin
to turn pink. Now, you see the shrimp has turned pink, and we're going to add
a 6-ounce container of frozen peas. Now, sometimes
it's difficult to find snow peas in the store that are frozen, but a lot of times you find
them fresh in your store. So, if you find them fresh, be sure to microwave
them for about a minute before you put them into this dish.
We're also going to add 2 cups of
brown rice that's already been cooked.
OK, we're going to mix those together.
And I'm going to let this cook for
another 2 to 3 minutes until everything is heated through. OK, and this is your
final product, after it's been cooking another 2 to 3 minutes.
This particular dish I decided to serve with a
green salad and some cantaloupe.
