Hi this is Dave for Expert Village and today we are roasting a pig. Okay now we are going
to put it back on the tray that is going to hold these charcoals here again. Then we are
at the end run of this so again it is very very hot steel. I know it has been off for
a little while and then using the handles now we turn the charcoals back onto the caja
china. Okay after 10-12-14 minuets you want to take a peek at it to see where the skin
is to the doneness that you like so just go ahead and lift up both handles. To me it looks
like it need 10 more minutes and then we can lift it and take it off. Okay so the pork
is pretty much done we looked at to see if the skin was as crispy as you like it to be.
If it is not quiet to me it was not quiet enough cause you want it to be almost like
cracklings at the end.
