Hi this is Dave for Expert Village. Today we are going to make some lobster pot pie.
So now we have to saute our mushrooms and our shallots. What I like to do is add some
canola oil to the pan. Then we are going to add some butter to it also, butter has a real
low smoke point. So it is really nice to add a little bit of oil to the pan so add the
smoking point. You can see how this works over high heat. You kind of have that beautiful
butter flavor to this but it will not burn when you add the butter to it. We want to
add our beautiful mushrooms that we have just sliced up, you can see it is starting to sizzle
a little bit. Go ahead and toss those all in and our shallots as well. So put those
in to the bottom get everything all in there. Start stirring them around, I have this on
high heat. You want to start it like this and this is going to soften everything and
then you can actually turn down the heat a little bit so it starts going.
