Okay so now we have been
cooking the tomato base
the base of the sauce for a while
I have the tomatoes in here
the garlic and the olive oil
the spices I started with
adding the cans of sauce
adding 4 cans of sauce
I will now add water to cans, filling half way
pour the water into the pot
same thing with the tomato paste cans
now we have the sauce cam - the camera just watching the pot
now add more water
I might add more water later
but right now it's pretty good
after I add the water
I will add two tablespoons of sugar
mix it in well
add red wine
that much
add one bay leave to the pot
mix well
at this point I have the oven at medium heat
add a little bit more fresh parsley
bullet-marked parsley
that's nice!
Now I will stir this and let the sauce simmer while we are browning the meats
OK that's good for now
Now we are starting on browning the meatballs
Now I have the sauce in pretty good shape over here
at this point
everything that needs to be in the sauce is in there
this is what you want to have
so the meatballs can go straight from the pan into the pot
This is the important salt pork
don't let it get too brown
branches together interest this time of year
now you will take out the salt pork
but keep all the salt pork grease in the pan
You want the salt pork bits out because they will burn as your browning the meatballs
Get all the pieces out as best you can
Now we are going to start browning the meatballs. You want the pan to be very hot.
This is a non stick pan that I have already ruined from the high heat
But it's just dedicated for the meatballs
I start with about half the meatballs I rolled out
in one pan
While you are browning the meatballs
you will need two wooden spoons
so you can roll the meatballs around the pan.
I remember my grandmother making these meatballs when I was a kid
at my grandparents house
and my grandfather
would watch
candle pin bowling
that's where they have the little thin bowling pins and tiny bowling balls
It was galled bowling for dollars. I think that would have been
late seventies
I would sit there and watch bowling for dollars with my grandfather
while you could smell the meatballs being cooked in the kitchen
This is one of the memories I have while I'm cooking these meatballs
My grandfather would also on a TV tray
he would get a
fresh block of Parmesan cheese
and while he was watching
the candle pin bowling, he would grate the Parmesan cheese into a jar
It takes a while to grate that stuff, so he did it while watching TV
That was his job. We always had fresh Parmesan cheese whenever we had a meal
you put it in a bowl with a spoon and you just pour it on the food
What you're doing here is you're really not cooking the meatballs. You are just searing them.
so you can lock in the juices and then quickly add the meatballs to the sauce
Whats good about this here is it's cooking in the salt pork grease
You will take the meatballs from the pan right into the sauce and the salt pork grease
flavor will get into the sauce
That salt pork flavor will get in the sauce!
While that's browning there I'm going to take these sausage that have already been browned
where going to add those to the sauce
following each one are ya? haha!
OK, we have the Sausages in the pasta sauce
these meatballs are getting there.
You see this meatball right here?
it's almost a crusty brown. That is what you are shooting for
sometimes you have to take the meatballs and hold them up like this because they are a weird shape. You'll never get a perfectly round meatball
If you do then they were not homemade, I can tell you that right now
I'll keep searing the meatballs and also stir the sauce. The sausage in there real nice!

These are almost there
After I do these meatballs I will do the same for the rest
decorative value
and then will do the pork chops
OK, almost there
Now we will put them in the sauce just like that
and I'll come back later
Now we have all the meats in the sauce
you can see here, we have meatballs and sausages
and pork chops that are in there
This is going to simmer for a while
not too close... the camera is going to fog up
now let this simmer
for probably another 2 to 3 hours
and I will keep watching as I go
and slowly stir. Once you have meat in the sauce
Don't just dive you spoon in the sauce because you can start breaking up the meatballs and sausage.
Push the spoon down the side
the gently stir the sauce
down the side, then stir
so if your going to stir the sauce with the meats always push the spoon down the side of the pot first
that way you are not breaking anything up
at this point here
I will add a little bit more parsley
let me taste some of this here real quick
hmm... hmm... This is like a soup! You could eat this in a bowl. I'm telln' ya!
It's fantastic!
it needs a
little bit more oregano
and a little bit more
basil
and a little bit more fresh ground black pepper
now we will slowly stir that in there because we have nice precious meat in there we don't want to
break up
Now we will let that cook
for a while and I will keep my eye on the suace
I will come back and show that after
this has been cooking for a while, a lot of grease is going to rise to the top
every now and then you want to
not stir it and let it sit
let it bubble a little bit because that's going to let the grease come to the top
which will let us
pool off the grease
you can see I've already taken out some grease
as it pools tot he top you are going to use the back of the spoon
and pull out your grease
we will come back when we are at that point
OK, this has been cooking at medium heat
on the electric stove
for about
15 to 20 minutes. Then I just let this sit
for about five minutes
you see on the top here we have these little pools of grease
so I'm going to put this spoon in here
and pull these grease out
if there is a little bit of grease then we are going to pull it out of the sauce
Once we get it all pulled out
then we will stir the sauce again
a lot of the grease pools on the side
pull some here
you don't dig your spoon in, you just
hold it right on the side like that and the grease will just go into the spoon
see that?
just like that
there is some more right there
some more over here
OK, we will let that cook some more
now we will stir a little bit more
slowly
again, I am going down the side of the pot first so we don't break the meat up
and we will just let that keep cooking
OK, this is about 20 minutes after the
last time
I took grease out
I did a lot of stirring along the way
let it simmer some more
right now you see
it's at number 2 on the heat
on an electric stove even that low it's still boiling
we have some grease here we want to get out
so we are going to go ahead and dig this out
a lot of grease right there
bring all that out and let it cook some more
the longer you cook the more this grease is going to come up and eventually it will stop coming up
OK, you can see I almost have a full cup of grease
we are probably going to have
2 cups of that when we are done. OK, that's it for now
The sauce is now done
it's been cooking for about
2 hours after the last segment of video
so the sauce has really been cooking for
about three-and-a-half hours
and the meat is in really good shape. So what we are
going to do now is taste it
and this is one of the benefits of cooking. You get to taste
before your guests arrive
so we have a meatball and sausage
now I'll get some pork that;'s in here
a nice big piece of pork chop
Now put some sauce on the meats
because you have to taste it with the sauce
alright now... I need a fork!
OK, so a well cooked sausage, you should be able to
cut it nice and easy with a fork
like that. Nice and tender! Hmm... That's perfect!
