Mississippi Mud Pancakes Recipe - Vegan Chocolate Pancakes
Hey my Sweet Vs, it's The Sweetest Vegan here. So to day on the show we will be making something that I came up
in my head last night. I was like I want something chocolate so I am going to try to make vegan chocolate pancakes.
It seemed simple and easy and I can just whip it up really quick. But then I looked in the Southern Cooking Bible
this morning, no chocolate pancakes.
And as you all know, I am veganizing the Southern Cooking Bible, that is all I am doing right now.
So I was like how can I make this happen and I looked through the cakes and there was a recipe for a Mississippi Mud Cake.
It was like a chocolate cake with all this chocolate all over it. I was like yep,
we are going to stack up the pancakes, the chocolate pancakes, we are going to drizzle all this chocolate on it.
and have a B-LAST. Even though it is probably one of the most unhealthiest things I ever made.
But that is what we are doing. Here we go.
Mississippi Mud Pancakes Recipe - Vegan Chocolate Pancakes
So we are going to start by whisking together our dry ingredients.
We have all purpose flour, cocoa powder, raw sugar, baking powder and cinnamon.
and a dash of salt. So give that a good whisk until it is all combined.
Then we are ready for our wet ingredients. We are almond milk and applesauce.
Give that a good whisk until everything is well combined and my cocoa powder was a little chunky
so I had to give it a few extra turns of the wrist. And then we are ready to put it in our frying pan.
I have a small frying pan so I can only cook one at a time, but if you have a large griddle or whatever, feel free to use it.
So we are just going to drop a little bit of coconut oil into the pan, yes you can use whatever oil you like,
I am just preferring coconut oil right now.
Drop that into the pan, then you are ready for your mixture. Use a cup to measure out your batter.
It'll make it easier to pour into the pan. And try to keep it poured into the center, not all around the pan like I am doing
Once you have the bubbles to raise up and it starts to get dry around the edges,
now you are ready to flip them. Let them cook on both sides for about 2 - 3 minutes.
At a low to medium heat, you don't want to burn them. They well be very fragrant, it's chocolate
so they will smell up the whole house with chocolate.
Don't be alarmed, just stack them up. And then I have a secret to tell you all.
I am being 100% transparent here and some of you all are going to leave me hate comments and stuff.
I am using hershey's chocolate syrup because that is what we had in the refrigerator.
I read the ingredients. Some of them I could not pronounce or say or knew what they were,
But none of them looked like they weren't vegan.
If you want all vegan chocolate for sure, I have a chocolate ganache recipe. I will put it right here.
And chocolate ganache is a bit much for in the morning, but so is Hershey's chocolate syrup.
With it's high fructose corn syrup and everything else in it.
But it looked delicious and it tasted delicious too. So drizzle on whatever you have
You can melt some chocolate with a little bit of vegan butter to make it more syrupy, and drizzle that on top of your mud pie,
cake, pancakes early in the morning.
So here we go, let's give it a taste test.
Okay to the chocolate pancake themselves are light fluffy and airy
and they have plenty of chocolate flavor and they are good all by themselves, but
the chocolate syrup just makes them like dessert, early in the morning.
So if you don't want it to be dessert, you know cocoa powder by itself isn't that bad
and you can cut back of the sugar a little bit, eat it for breakfast, it will be delicious.
And if you are going for dessert or a special occasion, valentine's day breakfast, something like that.
Just drizzle some chocolate with a little bit of vegan butter, chocolate ganache or whatever you have on hand
on top and it will be wonderful. That's it for today. Bye.
