today we will make achari baingan.
acahari baingan made with spices used for makingpickle will be pleasing for all.
lets see what all ingredients are required for making achari baingan.
brinjal - 500 grams
cumin seeds - 1/2 tsp
asafoetida- 1-2 pinch
red mustard seeds- 1/2 tsp
fenugrek seeds - 1/4 tsp
turmeric powder - 1/2 tsp
coriander powder - 1 tsp
fennel powder - 1 tsp
ginger - 1 inch baton (grated) or 1 tsp paste
red chilly powder - 1/4 tsp
garam masala - 1/4 tsp
mango powder - 1/2 tsp
salt - as per taste (less then 1 tsp)
mustard oil - 2-3 tsp
green coriander - 2-3 tbsp (finely chopped)
lets start making achari baingan.
preheat a pan and cut brinjals. after cutting the brinjals don't keep
them in open as they may turn black in color. keep them in water after cutting.
remove the stalk and cut brinjals into 1.5-2 inch long pieces like this.
pan has heated up now add oil in the pan. for making achari baingan we use mustard oil only.
add 2 tbsp oil in the pan.
when oil gets hot add asafoetida and cumin seeds in oil.
after sauting for while add fenugreek seeds, rei, ginger, turmeric powder, fennel powder, coriander powder in the pan.
saute all the spices for a while and then add chopped brinjals.
very pleasing and tempting aroma can be smelled.
brinjals are nicely coated with the spices now cover and cook for 2-3 minutes and then check.
now add 1 tbsp water in brinjals.
cover and cook on medium flame for 3 minutes and then check.
sabzi is almost ready, cook for just 2 more minutes on medium flame.
it is very important to stir and check the sabzi so that it don't get burned.
check after 3 minutes.
brinjals have become got tender, sabzi is ready.
now add mango powder, garam masala and green coriander in the sabzi.
always add green coriander and garam masala in the end so that their aroma stays fo rlong in sabzi.
achari baingan is ready.
serve achari baingan with chapatti,naan,parantha or rice.
