Hi, this is Dave for Expert Village. Today we're going to make what we call a stuffed
Cajun swamp log. Now we have the roasted bell pepper, we're going to go ahead and mix in
to our meat mixture, pour that right in. Now if you find the mixture a little tough to
move around, what you can do to make it lighter you can just add a couple of eggs to it; you
don't even need to beat them in. Just go ahead and crack them and put them in. It will be
a little gushy on your hands but you can do that so that will help it just work through
and it will combine it. It's not always necessary it just depends on how much fat is in the
meat that you get if you use a little drier meat like turkey it doesn't have a lot of
fat in it. Then you may need this if you use ground meat that has a lot of fat in it then
ground pork which does also which we use portion of then chances are you won't. But just go
ahead and move that around and this is going to be the bases of our Cajun swamp log.
