Bay-crusted Cod with pumpkin cream and balsamic vinegar
Ingredients for 4 people 400 grams of fresh cod fillets extra *** olive oil 20 ml balsamic vinegar 10 ml 2 sprigs of fresh thyme pumpkin 300 grams shallot 40 grams 1 clove of garlic a few bay leaves vegetable broth 100 ml salt and pepper to less than 1 gram
Welcome back to my company, today I will prepare an appetizer
Bay-crusted cod with pumpkin cream with thyme and balsamic vinegar
The ingredients for our preparation are
fresh cod
vegetable broth
pumpkin
bay leaves
fresh thyme
balsamic vinegar of Modena
shallot
garlic
extra *** olive oil
salt and pepper
in a saucepan with a handle pour a little olive oil
add shallot cut a-la-Brunoise (cubes of 5 mm side)
and a clove of garlic without its center
let the mix get slightly brown
combine pumpkin, cut into little cubes
in order to facilitate the cooking and make it homogeneous
toast lightly
cover with vegetable broth
and cook
when the pumpkin flakes thoroughly, it is ready to be pureed
add a little salt and pepper
also add a sprig of thyme
while the pumpkin is cooking, start working the cod
we use only the highest part (the back) of the cod
prepare slices of the same size
Season with a little salt and pepper
with the bay leaves, previously washed, cover the two parts of cod (above and below)
bind with kitchen string
lay it down on a perforated baking pan
the cooking of the cod can be made steamed in the oven, for whoever has the possibility
or otherwise on the fire, using a steamer
in this case we use the oven at a temperature of 85 degrees
we set the steam to 100% and cook for 10-15 minutes
Meanwhile, the pumpkin is cooked. pour it into a glass for blending
add a little olive oil
and cut a few leaves of fresh thyme
mix it all with a blender
to make a creamy mix which is perfectly smooth, uniform and dense enough
and here's our cream
when the cod is ready, remove it from the oven and prepare it to be served
check the cooking, should be soft, then maintaining its humidity...
but still it has to be perfectly cooked
Remove the kitchen string
Now we just have to serve
lay down a thin layer of cream on the plate
Gently support the cod
using a spoon, add a few drops of balsamic vinegar
it is important not to overdo it, just a few drops to give the right amount of acidity
and to stimulate the taste buds
we end up with a little olive oil and a sprig of fresh thyme
and there you have our starter
