Let's make tagliatelle with smoked pork.
Add salt to boiling water and cook the tagliatelle for 6 to 8 minutes.
Pasta is believed to have first appeared in Ancient Greece. It was a square sheet of dough called "lassanon", what we call lasagna nowadays.
Finely chop the onion.
Finely chop the garlic and also the basil leaves.
Basil adds aroma to various roasts, salads, boiled meat or vegetables, stews and soups,
while it is also included in a lot of sauces primarily made with fresh tomato.
Cut the smoked pork into cubes. A spicy and tasty meze that is accompanied with a nice red wine. You can also enjoy it as a main dish.
Finely chop the hot pepper. Make sure you wash your hands well after you have cut the pepper.
Strain the tagliatelle once they have boiled.
Heat the olive oil in a saucepan
and sauté the onion with the garlic.
Add the Santorini tomatoes
and the finely chopped basil leaves.
Sauté the smoked pork cubes and the hot pepper in another frying pan.
Add the smoked pork in the sauce and cook for a few minutes.
The sauce will be ready once the liquids have been absorbed.
Mix the tagliatelle with the sauce and serve.

Grate the gruyère cheese from Zakynthos.
Sprinkle the grated cheese over the pasta.
