Today, shooting from our new studio kitchen
I would like to cook lemon risotto with you
We need:
300g of risotto rice
25g of butter
25g of parmesan cheese
125ml of white wine
Olive oil
1l of vegetable stock
One lemon
One onion
Garlic
And parsley
At a restaurant, if a waiter opens the bottle, it shouldn’t pop as it’s quite distasteful
First, put olive oil in a pot
Heat the pot and the pour the oil in it
Let it heat for a short time
And then add the onion and the garlic to the oil
The onion and the garlic have to sweat for a while
Next, add the risotto rice as it has to sweat as well
It is important that you stir the whole time
When the mixture is clear, add the white wine
Boil it until the white wine reduces
And don´t forget to stir
Now the white wine has reduced, so, I add the vegetable stock
25 minutes have passed and now it is thick
Afterwards I add the juice from half a lemon
And the parmesan cheese and butter
Lastly add the parsley and season it with salt and pepper
For the risotto to be ready, you need 40 minutes
It is enough for three people
It goes very well with fish or poultry
