Pumpkin and carrots soup
Our healthy and delicious recipe this week
is a creamy soup with pumpkin and carrots
quite creamy, and I'll finish it
with spicy seasoned chickpeas
and dried meat in very thin slices
and crumbling feta cheese on top.

To start this soup,
I'll cut 1kg of Japanese pumpkin into very small pieces
because it helps the cooking.
Also three medium carrots.
It was extremely hard to peel this.
If you have a technique that's better than mine
please tell me here below.
I really want to know.
Then I'll add two cloves of garlic
without that germ inside the garlic.
- Without the soul of the garlic. - Without the soul.
Half of a big onion that you don't even need to chop.
And a little bouquet garni of fresh thyme.
So I'll cook all this inside the pan
and I'll add lukewarm water, to help ease the cooking.
As you could see, there's no oil
and I won't add any of the seasonings yet.

It will make it even tastier
giving it a crunchy feeling in the end.
Also to pour over this soup
I'll cut a small slice of dried meat
really small, just 100g of dried meat
very thin, then toast it in a very hot anti-adhesive pan
with nothing else, no oil, no salt.
Just to make the meat a little warmer
to pour it on top of the soup when it's ready.
Watch out for the amount of salt
you'll put in the soup, because dried meat is very salty already.
When the vegetables are quite soft
turn off the pan
remove the bouquet garni from it
and blend it with a hand mixer.
Why did you put the bouquet garni?
To give it a nice flavor
but it doesn't stay in the pan.

and the soup was cooking.
If you think it's too creamy
just add some water.
I use some water from the cooking
that I remove just before blending
so I can balance precisely
how much water I need in my soup.
To finish the soup, just season with soup and fresh black pepper.
Then you add the amount you want
to taste.
Then just serve it on a plate
with seasoned chickpeas on top
a little dried meat
and if you want, some feta cheese.
If you're vegetarian or vegan
just remove the dried meat and this soup is perfect for you.
Salt and pepper to taste
