We’re making our Easy Chickpea Salad with Lemon and Dill.
You are going to love this salad.
There’s chickpeas, cucumbers, tomatoes a lemony-dill dressing and lots of feta cheese.
Yum!
I love cheese. Yes. It’s really easy. It is so can we go make it now?
Let’s go do it.
To make things easy, we’re using canned chickpeas although you could definitely use home cooked chickpeas instead.
Rinse the canned chickpeas under cold water and move onto the veggies.
For crunch, diced cucumber is great. We love using hothouse or seedless cucumbers.
The skin is less tough than your traditional cucumber and there’s no need to remove any seeds.
Tomatoes are next — simply chop them up into bite-size pieces.
Feta cheese makes this salad delicious — crumble as much or as little as you like into the salad.
We keep the dressing really simple. Start with the juice of a large lemon
(that’s going to be about 1/4 of a cup) — oops, make sure there aren’t any seeds that sneak in!
Add some olive oil, a little Dijon mustard and a tiny bit of honey. Then grab some fresh dill.
Lemon and dill are wonderful together, but basil, parsley or even mint would be equally delicious.
Now season with salt and pepper. Black pepper is perfect here, but this time we’re using
Aleppo pepper — it’s mild in heat and a little fruity.
Give the dressing a whisk then pour over the chickpea salad!
Toss and serve — by the way, this salad is great made an hour or two in advance!
