and we are back in our kitchen
to cook with you
the meatballs à la Marie
in other words meatballs following my mother's recipe
For this recipe you'll need:
400 gr of first choice minced meat
50 gr of guts
50 gr of bologna
50 gr of grated parmesan cheese
some milk to soften the guts
flour
and 2 onions.
We will match them with some tomato peas
and to cook them we will obviously need some peas
some tomato pulp
and one of the 2 onions.
Great, we can start cooking!
Let's start by
softening the guts in the milk.
Now we need a container
and we move our softened guts
Now we take the minced meat
and we blend it together
with the softened guts
and we knead everything together
In the mean time
we take the bologna
and we chop it up
in the grinder
in order to make it as minced as possible.
We add
the minced bologna.
We blend it in.
At this point we can
add some salt
and pepper
Don't put too much salt
because the bologna is salty
and in a minute we will add the parmesan cheese
So you just need a bit!
Now we add
the cheese

Now the mixture is well blended
We take
2 cutting boards
One for me
Where Im going to create the meatballs
and one for Daniele
who in the mean time will cut the onions.
Now we take the flour
and we roll the meatballs inside.
We forgot one ingredient
which is the rosemary
and it will go inside the pan with the onion.
In the mean time I finished covering in flour the meatballs
and we can move on the stove
The oil is hot
we can add half of the chopped onions
and we let it sweat.
While the onions sweat
we prepare another pan
for the peas.
The onions are ready
and we can drop the meatballs in the pan.
Now we pan fry them
for a while on all sides.
In the mean time the oil
for the peas is ready and we can add the onion
and then we add some white wine
and we make it evaporate.
We add the tomato pulp to the onion
and we make it shrink.
We pan fry on all sides and meanwhile
we are boiling some water in the kettle
because we are going to add a bit
so that the meatballs won't stick and will cook better
At this point we can add
the peas.
20 minutes have gone since we started cooking them
our meatballs are ready
in fact they have to be
very soft on the inside
and with this lovely sauce
Now we turn off the fire
and we serve them.
