Hey guys it's Joanne from Fifteen Spatulas. Today's video is going to be a little trip
back to childhood, we are going to make homemade strawberry fruit rollups. I ate these all
the time when I was a kid, and it's a little alarming to look at the ingredients list now
because the storebought version is full of high fructose corn syrup, hydrogenated oils,
artificial colors, artificial flavors, and those just aren't things that I want to eat.
The homemade version only has three ingredients and it's all natural. To get started I have
eight ounces of strawberries here, I just cut the stems off. We're going to throw this
into a blender and we're going to puree this until it's smooth. And if you don't have a
blender and want to use a food processor instead, that works just as well. Once your strawberries
are pureed, just check that there are no big strawberry chunks left. And then pour the
contents into a saucepan, and to the strawberry puree you're going to add three tablespoons
of granulated sugar, and a tablespoon of freshly squeezed lemon juice. Now we're going to get
this mixture on the stove and we're going to cook some of the moisture out. I set this
over medium heat and we're going to cook this for 10-15 minutes, the mixture is going to
get really thick and jammy as we cook some of that water out. I've got my thick strawberry
jam here, we're going to spread this out onto a silpat (you could use parchment paper as
well). And use a spatula or an offset spatula to spread this out into a rectangle. You want
to spread this about 1/8 inch thick. If you can see the bottom of the silpat it's just
a little bit too thin, and as this bakes or dehydrates in the oven, it's going to lose
some moisture, so it's not going to come out quite as thick as it is when it goes into
the oven. We're going to put this into a 170 degree oven for about 3 hours to let it dehydrate.
My strawberry fruit rollup is done. I let this cool completely on the pan, then I transferred
it to a piece of wax paper that I put on a cutting board. Take a pizza cutter and cut
strips of the fruit rollup. Then take this little strip, start at the bottom, and roll
it up! Voila, homemade fruit rollup, I love these things. They're so fun! If you have
