Hello again and welcome to our very first episode of Tan Minutes. What a better way
to kick start the series by introducing to you a very special and unique noodle dish which
is what I had for dinner last evening. I am very sure you have never tried it before less
even heard about it. So how unique is it?
It's an infamous local dish that can be found in Singapore. Known for its rich flavour, unique blend of ingredients, it never fails
to satisfy an empty stomach.
Many early histories of Hokkien prawn noodles soup describes how it was brought to Singapore in 1880's by immigrants from Xiamen in the Fujian Province of China.
Dried shrimps and scallops were brewed for at least 8 hours to make the stock. Resulting
in orange tinted soup. Between the 1940's and the 1960's the dish was served along Hokkien
St in Singapore and was popular with the night crowd. Many variations of the dish exists and can
be found internet. In our recipe, we focus on the use of locally found ingredients in
the local grocery stores such as: large shrimps, shallots, pork and bean sprouts, etc...
As well as if you are spicy person, a lot of red cut chili in soy sauce will add a lot
