Hi everyone today I'll be making potato salad
this is a classic it's also quick easy and delicious so let's get started
to make my potato salad I'm going to use 4 large potatoes peeled
and then
I'm going to pierce
to pierce
I'd like them to cook a little faster
so I'm just going to pierce them with a fork
and place them in my pot of hot water
you don't have to over pierce
just a couple of pierces on each side help your potatoes cook faster
once my potatoes are in my water I want to salt my water
a lot of people aren't salting their water, salting your potatoes
just as you would salt your pasta
helps make for a tastier potato salad
cover with a lid
lower the flame and let cook,you don't want to over cook
you don't want to over cook,you just want to cook,until you can pierce through
we're also going to need some fresh parsley,
some chopped red onion
one small onion should do
a green pepper,you can use bell pepper
I prefer these
they're a little bit crisper,juicier
lighter and I find they're much better for potato salad
a clove of garlic,some salt and pepper,some cayenne pepper
and some mayo of course, I don't have it out yet,I like to keep it in the fridge until the last minute
we're going to let our potatoes cook and we'll be back
once our potatoes are cooked
I have a bowl of ice water with ice cubes in it
and I'm just going to take them out of the water
and set them in here to cool
the ice cubes help
you don't have to add the ice cubes
I find they help cool the potatoes faster
once our potatoes are thoroughly cooled
we're going to slice them,now you can slice them
just straight
into thin slices
what like to do
is cut into half moons
just cut my potato down the center and then slice up like that
you can slice as thin or as thick as you like
I really don't like them
sliced paper thin
again just slice down the center
and then slice down
once my potatoes are sliced
I'm going to add my garlic and green pepper
my garlic is chopped
you can use a garlic press
if you prefer
don't use garlic powder
it's a completely different taste experience
and you won't get the health benefits
garlic has over 350 different chemicals
it changes alchemically after you crush it ,15 minutes after you crush it,it changes
so for some reason I prefer mine chopped
I feel there's a taste difference
like I said you can use a garlic press if you like
your salad will be much tastier if you use fresh garlic and you'll reap all the health benefits
and we're going to add
parsley
which neutralizes odors, if you have concerns about fresh breath, or your freshness
because garlic ,onions and other strong odors also come out of your pores as well as your breath
using parsley
will
neutralize those odors
if you notice they sell parsley caplets at the supermarket
it's because parsley neutralizes strong odors
fresh parsley works far better than caplets it's much stronger
if you can get organic
I suggest you get organic
we'll be adding the parsley,the parsley will neutralize odors but not the beneficial properties
so don't be afraid to use your fresh garlic
so we're going to add our garlic and peppers
our red onion
a dash of black pepper
and some cayenne pepper
it's
really beneficial for you
has a lot of health properties if you have one spice in the house make sure it's cayenne pepper
a dash of that and it adds a lovely flavor,I prefer it over paprika
just a bit less is more when it comes to cayenne pepper
potatoes also
have a lot of beneficial properties
if you're having a difficulties with insomnia,or depression
I think there's even a book out called Potatoes Not Prozac
potatoes have so many beneficial properties
it's one of those veggies that's great for you
you can destroy those properties by having them fried
you only reap those benefits by having the potato boiled
that one of reasons potato is considered a comfort food it has a lot of properties that are beneficial for us
they
increase our serotonin,they cause an insulin response which releases tryptophan
which helps release serotonin
you'll actually feel happy
like I said it will alleviate depression,it'll alleviate insomnia
it also helps with impulse control
if either you or your children have difficulties with impulse control,ADD or anything like that
adding potatoes,boiled potatoes to the diet
will be very beneficial
so potato salad is actually excellent,I also have a no mayo heart healthy recipe
that I'll be doing

though i'd do the classic today
but actually potato salad
is one of those dishes
that bring a lot of health benefits to the table
for us
we also have things here that combat the cholesterol, the cayenne pepper
is actually one of those it helps by clearing arteries
it helps fight cholesterol,
it helps regulate blood pressure, a million and one things
we're going to add our parsley now
as I said this will neutralize odors
and
it's chock full of antioxidants
parsley is another herb that I think the health benefits
and the properties are widely overlooked
it
helps
chelate heavy metals out of your system
anyone concerned with
heavy metal toxicity
or even as a preventative
garlic is one of those herbs as well as parsley
that help remove heavy metals
from your system
I'm going to add a considerable amount
about 2 tablespoons
I'm using just the leaves,not the stems,and I'm not chopping my parsley
I want to save a little for the top
as well
once our
parsley is in
we have some nice color there,we're going to add our mayo
once we have a decent amount in there
we're going to stir it up
just fold from the bottom up,fold it into your mayo
try not to break up your potatoes
I don't add vinegar, the potato salad comes out creamier
tastier.especially since we've salted the potatoes
it's a
very tasty
tasty potato salad
so once that's done
I want to put this on a serving platter
I'm going to let it chill
in my serving platter
once that's in my serving platter
I want to garnish with a little cayenne pepper
just a dash as I said less is more
when it comes to
cayenne pepper , I want to take some of my parsley
came out really pretty
very tasty
chock full of healthy stuff
I just want to garnish
with some parsley flowers
our salad is ready
