Delyan Donchev - Someone Like You...
My name is Delyan Donchev, I live in Sofia,
I am a workaholic. I own a bar.
From morning till evening I take care of it.
I have done a bunch of things in my life
and the number of establishments I have personally owned…
well, I think it is the sixth one.
I have had a bar, I have had several restaurants,
obviously not simultaneously but at a different point in time.
Having a bar brings a strong emotion which lets you give happiness.
The best thing is seeing people happy, seeing that you have given them emotions.
We give emotions; that is all we do.
I have been cooking since I was little, say, when I was six or seven
I started making desserts, cakes and so on.
My father was a very good cook so I started as a child because of him.
The happiest time of my life is probably when we owned an establishment in Italy-
on a magnificent island, inhabited by lovely people, with wonderful boats
and so much more.
It was a great feeling, even only because we were
the only foreigners that had a restaurant at this exact place,
and that was not an easy job.
What I miss the most from this period
are the colours.
What really overwhelms me in Sofia is the grayness –
in Sofia there are no colors, everything is gray.
I do not like cold places, I like hot ones.
It gives me great pleasure to wake up in the morning,
open my eyes and see the sun shining miraculously
against a wonderful blue background.
That makes me feel really good.
Cooking for the person I love is the best part.
It gives me pleasure, a lot of love
and an infinite feeling of satisfaction when I see
the happiness in the eyes of the person in front of me.
I fear not being able to travel.
I would really like to keep my freedom of movement anywhere, always, at all times.
I need to be able to visit new places, feel new flavors
and new scents that are a constant source of inspiration.
I am working — this is my only entertainment.
My work involves tickling people’s senses,
making them feel happy from what they get,
seeing their emotion and this only happens
when you do it well and do it with lots of love.
Being able to give love is amazing. Nowadays, I think most of us
are not willing to give love; we have become such egoists.
The emotion you feel
when the restaurant is full
with nice people having fun is great,
but it is you and only you who knows the price you pay for achieving this-
a lot of running around, a lot of nerves.
This type of business is so hard to do in Bulgaria.
When you see the world or a part of it-
the more you see, the more experience and knowledge you gain.
Your view of life expands
and makes you more productive and more valuable for yourself and the people you love.
Perhaps I would like to find a piece of heaven somewhere in the wide world,
own a nice small restaurant where I can serve ten scrumptious dishes,
offer five quality drinks,
make love to my wife often, have at least three kids,
swim in the ocean every day,
and why not try to learn surfing.
