Hi! Starting another I Could Kill for Dessert!
And on today's show I'm going to prepare a cheesecake with a delicious cherry sauce...
Is there anything easier than preparing a cheesecake?
There is...

And I'm going to prepare a drink inspired by Jamaican Sunset,
but since I couldn't find the right Rum for it, I'm going to prepare a SP Sunset to honor the city of São Paulo!
Let's go?
So, first thing I'm going to do is preheat the oven to 180C.
Then you will need a 20cm mold,
baking paper,
one scissor
and a pencil
The mold must have a removable bottom.
Then, I'm going to brush the mold with butter, just the bottom.
And I'll stick the baking paper.
Here's done!
I'm going to start doing the cheesecake crust.
It's 200 grams of corn starch crackers.
And 100 grams of soft butter.
Then I'll process it all here.
It's always a good idea to plug the food processor.
It has kind of a sandy texture, see?
Now it goes to the mold.
Then, I'm going to press the crust with the bottom of a spoon, ok?
Now, it's all flat. Can you see it, all flat?
Then I'll take it to the oven for just 5 minutes,
so the butter can melt and incorporate the cracker crust
so when we unmold it, it wont crumble, ok?
For the cheesecake's filling here's the deal:
Since I don't like to upset my husband,
and this is the last show of the second season,
I'm going to use lemon zest!
It will take a while cause I will need the zests of three lemons...
Then speed it up, Carol!
Make it real quick!
So, here's done!
Now, I'm going to put here 250 grams of cream cheese,
You can use ricota, if you prefer.
Half cup of sugar.
Then just mix it all here.
Then, one cup of fresh heavy cream.
It must be very cold, cause we will whip it until we have a Chantilly consistency.
But Chantilly with no sugar.
Here's ready!
Careful not to turn it into butter!
I'm going to add the "ricota", that was ready with the sugar...
"Ricota"?
Oh right, I mean cream cheese...
Good, then... Wait, I need to get the crust out of the oven.
Here's ready.
I will let it cool for a little bit.
"Mix it well!"
So, now I'm going to use the juice of three lemons,
Then I'll need 1 tbsp of powdered gelatine,
and I will take it on a water bath, to melt the gelatine.
Be careful not to boil the gelatine or it wont solidify!
Here's done!
Now, i will combine both!
"Strain it, if necessary"
Here's ready!
Now take it to the fridge for 2 hours so it can solidify,
and we will prepare the cherry sauce.
For the cherry sauce it's very simple:
No, it's not very simple cause I say that all the time!
But it's very easy to prepare the cherry sauce!
So here's the deal:
take the syrup that comes with the cherries,
and we will reduce this syrup.
The most important thing is that it can't be that syrup with Marraus... Marrauschino?
How do I say that?
It can't be that syrup...

Those cherries with Marrauschino?
Marraschino?

The syrup is good.
Now i will take it all and put it on the fridge.
"Reduce it until 3/4 of the syrup"
I will wait it cool down, the cheesecake is still solidifying...
And then I'll come back to finish the recipe and
we will prepare the drink, ok?
I'm going to prepare the SP Sunset now,
and here's the thing:
"Ice"
I put yesterday some white rum with a sliced chilli, so it can be a little spicy...
"Orange Juice"
"Passion Fruit Juice"
"Maple and Lime"
"Pomegranate Syrup"
"Dark Rum"
So, I'm going to finish the cheesecake recipe now.
You can let it outside, so it can defrost a little.
Or you can use a torch.
Now some cherries on top.
