It depends on recipe to recipe. We have a lot of experienced bakers that come in and
they use our recipe and the first couple batches of cookies that they make, it comes out flat
and it's because they've over mixed it. There are some cookie dough's, for example, sugar
cookie dough or butter cookie dough, where you can really mix a lot and nothing will
happen to it but that's the only cookie dough that I know, that nothing will happen. Now,
if you go with the oatmeal raisin cookie or chocolate chip cookie, it's very important
