Hello, my name is Teresa. Summer is a time for get-togethers. Top off the perfect day
with a Strawberry Caramel Ice-cream Cake -- my favourite.
For the base I have combined graham wafer crumbs, butter and sugar; reserving a half
a cup of the mixture.
In a bowl, combine pureed and mashed strawberries and sugar.
Reserve one and a half cups. Cover and refrigerate until serving.
Add the strawberries to softened ice cream and stir to combine.
Spoon half into your prepared crust.
Sprinkle with the reserved crumbs, walnuts and drizzle with caramel syrup.
Spoon the remaining ice cream on top.
Cover and freeze for 4 hours or until firm.
When ready to serve, top the cake with fresh Ontario strawberries. Slice into wedges, and
drizzle with strawberry sauce.
Mmmm. You can't get more delicious than that.
