Everyone loves a sweet treat,
but when you can make it yourself from something that grows right here in Missouri,
it makes it that much sweeter!
Fully ripe persimmons are nature’s candy, but if you try to use them while they're still firm,
you could be put off persimmon forever.
Wait to pick the fruit until after the first frost when the fruit is soft, almost mushy.
That’s when it’s just right for making persimmon fudge!
Combine four cups of sugar, a stick of butter or margarine, one cup of evaporated milk
and two-thirds cup of persimmon pulp in a heavy saucepan.
Cook over medium heat, stirring constantly, until the mixture reaches the soft ball stage
To see if the candy is ready, drop a bit of the hot candy into a glass of cold water.
If it forms into a ball, it’s ready.
Remove the pan from the heat, add marshmallow cream, nuts and vanilla.
Pour the mixture into a buttered pan, let it cool, cut and serve.
