How to Make Hoppin' John. Hoppin' John is a traditional Southern peas and rice dish
served on New Year's Day, but you don't have to be Southern to enjoy this popular recipe.
You will need 4 scallions 1/2 lb. collard greens 3 tbsp. cooking oil 1 chopped onion
1 3/4 tsp. salt 1/4 tsp. fresh ground black pepper 1/8 tsp. cayenne pepper 1/2 lb. smoked
sausage, split and cut into 1-inch pieces 1 10-oz. package frozen black-eyed peas 1
1/2 c. long grain rice 3 c. canned chicken broth Cornbread and 10 oz. fresh black-eyed
peas (optional). Step 1. Slice the white bulb ends of the scallions and chop the green ends
into 1/2-inch pieces. Remove the tough stems from the collard greens, and then wash and
shred the leaves. Step 2. Heat the oil over low heat and add the onion and scallion bulbs.
Saute until the onion is translucent. Add the collard greens to the pan, and then stir
in the salt, black pepper, and cayenne pepper. Stir while cooking until the greens are wilted
-- about one minute. Step 3. Increase the heat to medium-high and add the sausage, black-eyed
peas, and rice. Cook while stirring for 30 seconds and then stir in the chicken broth,
bringing it to a simmer. You can use fresh black-eyed peas instead of frozen. Just simmer
them in water until they're soft. Step 4. Reduce the heat to low and cover the mixture,
cooking until the rice is tender and the liquid is absorbed -- about 20 minutes. You can substitute
the sausage with a large ham hock, if you prefer. Step 5. Remove your Hoppin' John from
the heat and stir in the scallion tops. Serve immediately with cornbread and enjoy good
