Assalaamu Alaikum and welcome to Titli's Busy Kitchen with me Titli Nihaan.
I'm very lucky to have a job that takes me to some interesting places.
Last week, I was in a café in Cairo and I'm looking through the menu
and I see this thing called Hawawshi.
I turn to my colleague and say "What's Hawawshi?" and she said "Try it!"
So, I did
and I loved it!
The ingredients for Hawawshi are quite simple. I've got 400 g of minced meat.
You can use beef, chicken, lamb, turkey, goat, camel, whatever you want.
Some bread. The Hawawshi I was served was served on quite large, round, thick bread
like Stotties that you get in the North-East of England
but this is France. If their bread isn't long and thin, they're not interested.
I've managed to get hold of some pita bread so I'm gonna use those.
1 bell or capsicum pepper.
1 medium onion.
1 tomato.
Some allspice. This allspice has got all the usual suspects in it
like cloves and cardamom and cinnamon and nutmeg and I've got 1 tablespoon of that.
I've got a whole bunch of fresh coriander that I've chopped.
Optionally, you can also add in some chillies
that's red or green, if you prefer. I'm cheating.
I've got some pre-prepared red chillies that I buy in a jar.
The first thing I'm gonna do is turn my vegetables into quite a fine salsa.

A good tip for chopping tomatoes is to make sure that your knife is really, really sharp.

Now that I've got my finely chopped veg,
I'm gonna put it into a large bowl

add in the meat,

the spices
and the optional chillies.
I'm gonna mix this altogether.
Make sure it's all really well mixed together.
OK. That's fine.
I'm gonna take my pita bread and just create a pocket inside it
and spoon some of the mixture in.
If you've got one of these big pieces of bread like a Stottie,
you can just slice them in half
I'm gonna use the natural feature of the pita bread
of its pocket
and stuff this in.
I've got 6 hawawshi ready here that are stuffed
and I'm just brushing them, lightly, with some butter.

Now, I wrap each Hawawshi
in foil,
quite tightly.

They're all nicely wrapped.
They go into the oven at 200 degrees Celsius for 40 minutes.
Right. This has just come out of the oven.
Let's open it up and see what we've got.

Hmmm... Very satisfying.
