- Hey guys, I'm Sara Lynn, otherwise known as
the Domestic Geek.
Join me and my healthy food truck
as we hunt down unhealthy meals in need of
a mobile meal makeover.
I'm on the hunt for my first offender.
Wish me luck.
So, we're just going to go and hunt some people down
who are having lunch,
minding their own business,
and we are going to offer them a healthier option.
It's as simple as that.
Where are you guys headed?
Can you tell me a little bit about what's in the bag though?
That's really what I'm most curious about.
- Oh, we both got
the Mac Daddy
with mac and cheese
on a grilled cheese with bacon.
- Are you kidding me?
There's such thing as mac and cheese
on a grilled cheese, with bacon?
- Yeah.
- [Sara] So, I need to tell you a little bit about
why I have accosted you on the street.
Basically, I am on a mission,
I'm on a mission to help people eat better.
- Oh!
- Calling the wrong people.
- Of course, you guys are terrific candidates for that.
I have a food truck like a block away,
and there's free lunch in it for you.
If you're willing to come with me,
and you get the keep your mac and cheese.
I would not take something that epic
out of someone's hands.
- Okay.
- What kind of food you got on you?
- Oh, what don't I have?
I think we can make it worth your while.
It's not mac and cheese. - Is it delicious?
- [Sara] It is delicious, for sure it's delicious.
- Like, is it really?
- [Sara] Yes.
I swear.
Scout's honor.
- All right.
- [Sara] What's your name?
- Andrea.
- [Sara] Andrea, and you?
- Charlie.
- [Sara] Charlie, it's a pleasure.
I'm Sara Lynn.
- [Charlie] Nice to meet you.
- I'll shake your hand.
All right, come on over.
We're a block around this corner.
Well, I am definitely feeling the pressure,
but I am going to try to make you believers.
I'm going to get in there, make you lunch,
should be less than 10 minutes.
I'm lightning fast.
I'm sorry, I forgot to check.
Any food allergies?
- No. - No.
- Anything you guys detest?
Like, can't eat.
- Snails.
- Snails.
I do not have any snails on the truck,
so that is good news.
Today is your lucky day.
Charlie?
- [Charlie] Onions.
- Really?
No onions?
- [Charlie] No onions.
- Okay, that's a fair point.
Everyone's gotta get back to work.
No snails, no onions, I'm on it.
I'll see you in a few minutes.
- [Charlie] Sounds good.
- Okay, so, for Charlie and Andrea, I am definitely
feeling the pressure.
It is not easy to compete with a mac and cheese
grilled cheese with bacon,
so I'm not even going to try.
I'm not even going to try to come close.
I'm going to do something totally different.
I'm actually going to whip up my Mediterranean
quinoa salad.
Now, I know.
It's a sald, but it's really hearty, really filling,
and has beautiful Mediterranean flavors that I'm hoping
will really resonate with these two.
So we are going to start with some cooked chicken,
because it's nice to have protein in a lunch,
and then I'm going to use my quinoa.
So, into the bowl goes the beautiful cooked quinoa.
Now, I like to do my quinoa with a little bit of
vegetable broth and some garlic
in the actual broth while it's cooking,
but you could just use plain water as well.
Just gives it a little extra flavor,
and now we are going to build some of our Mediterranean
flavor, so what I'm using here,
I've got these amazing marinated artichokes.
You can get these in jars,
sort of in the olive aisle of your grocery store.
You've probably had them on, like, antipasto plates.
They're a bit salty, super flavorful,
they're usually packed in oil
and they are, like, a staple in a Mediterranean diet.
To these beauties, we are going to add some roasted
red pepper.
You could totally use fresh pepper here, for some crunch,
but the flavor of the pepper really gets deeper
when it's roasted,
and then, we are going to top this off
with some beautiful kalamata olives.
If you're not into olives, you can leave them out.
I know it's sort of a love-hate thing people have
with olives.
Now, to this, we are going to add
my all-time favorite Mediterranean ingredient,
feta cheese.
Because everything is better with feta cheese.
It's salty, it's delicious,
it's super, super flavorful,
and because it's so flavorful, a little bit
can actually go a long way.
To this, we are going to add our amazing cooked chicken.
We're just going to give this a really good stir
to combine it all.
And the dressing for this is super simple.
I got some nice extra *** olive oil.
You don't want to skimp when it comes to your olive oil.
You want to use the good stuff,
because it really makes a huge difference
in the flavor,
and now that we have our olive oil,
we're just going to add a little bit of acidity
with some fresh lemon.
So of course, the recipe for this beautiful salad

and I think you guys are going to love them.
We are super close to this salad being finished.
I've got a little bit of salt,
which I love,
and some fresh ground pepper.
And the final secret is
some classic Greek seasoning.
Now, I like to make my own Greek seasoning.
It's super simple to make.
I have a video on it, I'll add that in the description box
below,
and now that our salad's all put together,
we're just going to finish it off with some fresh parsley.
There is no substitute for fresh parsley.
The dried stuff just doesn't cut it.
It's not the same.
The great part is, you can make this ahead of time.
It will last in your fridge for three or four days.
You can bring it for lunch,
you can eat it for dinner.
It's super tasty.
Let's see how it holds up to a
mac and cheese grilled cheese with bacon.

So, you got some artichoke hearts,
and we've got some roasted red peppers,
some feta cheese, some olives.

- [Sara] That's chicken.
- [Charlie] Okay.
- And, no snails.
- It's really good.
- [Sara] Is it really good?
- Yeah, it is.
- [Sara] Is it--
- I need one more bite to determine.
- Andrea wants to make sure she's sure before
she tells me--
- Yes.
- [Sara] what her thoughts are.
- Exactly what I want to do.
(crickets chirp)
- What do you think?

You're like it's not a mac and cheese.
- But, it is really good.
- Aww, Andrea.
- [Andrea] It really is good.
- You totally had me on the edge of my seat.

- No, it is really good.
- Now, I hope that this, actually, it makes a great side
for your sandwiches because I know there's not
a chance in hell that you're not going to eat those.
