Hi and welcome back to najatskitchen
Today I will be making a delicious Apple cake
For the cake you will use:
2 large eggs, at room temperature
2 teaspoons pure vanilla extract
1 1/3 cup light brown sugar
1 cup corn oil or any vegetable oil
2 cups all purpose flour
1/2 cup toasted chopped walnuts(optional)
3/4 teaspoon course salt
3/4 teaspoon cinnamon
1/4 teaspoon nutmeg
3/4 teaspoon baking powder
1 teaspoon baking soda
2 cups of grated apples(use firm apples like granny smith)
I will bake it in 8 inch square or round cake pan lined with parchment paper(buttered)
Whisk together the dry ingredients
Preaheat your oven to 350 F and set the rack in the middle position
Use an electric mixer and beat the eggs on medium speed for about about 5 minutes
Add the sugar gradually while still whisking
Add the vanilla extract
Continue whisking for another 3 minutes
On low speed ,gradually add the oil
Add the apples
Let cool completely on a wire rack
To prepare the brown sugar buttercream
On a double boiler and over simmering water
Whisk together:2 large egg whites , 1/2 cup of light brown suger and a hint of salt for 2-3 minutes
Check if the suger is dissoled by rubbing the mixture between your fingers
It shouldn't be grainy at all
Immediately,transfer it to a mixer and beat on high speed until stiff peaks form(3 minutes)
Now ,add 1 1/2 stick of firm butter (unsalted)(not chilled)
Add spoon by spoon untill all butter is incorporated
Add 1/2 teaspoon vanilla extract
The buttercream may separate,but it's O.K
Keep mixing and it will be smooth again
You can use half the amout on the cake if you wish and use the leftover later
It can keep in the fridge tightly covered for 3 days.
Decorate as desired(I'm using apple chips)
