Hi! I'm Terri Turco and this is Expert Village. Now, we're going to take out that fabulous
biscotti that's been cooking for 30 minutes and we twice baked it for an additional 10
minutes on each side. When you go get the biscotti, you're going to notice that it's
a lovely golden brown. You're going to put that right on your rack because obviously
the pan is still hot. As you see, it's a nice golden brown on each side. That's what you
want. Since it's already cut up, you're just going to transfer that to a nice wire rack
to cool it. It's really important that you really let these cool in the open air on a
rack for at least 30 minutes to an hour. The reason being is hard biscotti is really supposed
to be a hard Italian cookie that you don't dunk into coffee. That's really what it was
made for. What you want to do is you want to let it cool on wire rack because it'll
harden a little bit more. You're probably thinking well this is too hard, I'm not going
to enjoy this as a cookie. The whole point of biscotti is dunking in that coffee. It
releases the flavors and it softens the cookie so it's absolutely perfect when you put it
in your mouth and enjoy it. Just remember twice baked, let it on your rack for 30 minutes
to an hour, and the make yourself a really nice cup of coffee or tea and dunk away. You're
going to love eating the almond biscotti that you made today.
