Helen McMahon for Expert Village. Our meringue cookie recipe is something you’ll probably
want to write down so I’ll tell you what the ingredients are. These are for meringue
kisses or forgotten cookies or forgotten kisses. You’ll need 2 egg whites, 1-1/2 of teaspoon
of salt, 2/3 of a cup of white granulated sugar, 1 teaspoon of vanilla, 1 cut of chocolate
chips, 1 cup of walnuts, chopped up walnuts. And the salt is beaten in with the egg white
and it has to be beaten a very long time in order to get a full volume of the egg white.
The egg whites, by the way, should be at room temperature. Don’t try to do this with cold
eggs right outside of the refrigerator because it won’t give you the high volume that you
need in order to make a meringue. All of your ingredients should be at room temperature
for this. And the vanilla and the sugar are added very slowly and then the nuts and the
chocolate are folded in very gently at the last minute. You’ll see that as we go through
the steps to prepare the cookies.
