Okay we've just peeled our potatoes and we are going to go to our second step in working
with these potatoes. You will see here I've got a little container with water and what
we are going to do is after we cube them, we are going to place them in a container
of water. The reason we do this is the longer the potatoes sit out, the quicker they are
going to brown and they are going too look really ugly. So we are going to go ahead and
get started. We are going to kind of a smaller dice on these. You don't want too large of a dice because
they are going to go inside the empanadas and you don't want them poking out, so they
are going to be a little bit smaller here. Here you can kind of see the size of the potatoes
that we are using. Now if you don't have time to use fresh potatoes and you want to use
some different things, you can go to your freezer section of your grocery store and
typically they've bought these potatoes already cut in cubes and kind of par fried. You can
get those and place them directly in your oven. I prefer to use the fresh ones. It really
does give them a better flavor but I know sometimes we just have the time to do everything.
These empanadas we are making today are a really great party food and every time I make
them for catering, people go crazy over them. So don't be afraid to have fun with them.
There are so many different flavors you can do to them. So really have fun with them and
play with different sweet fillings, savory fillings. There are all kinds of things to
do. Okay we've got our last little section now. Another thing with these potatoes if
you have anything left over, save them for the morning and you can add them to your eggs.
