[ Music ] [ Background Music ] >> Welcome to HERSHEY's Kitchens. I'm Linda Stahl. If
you are a chocolate lover like I am, you're always looking for new ways
to use chocolate. Today, I'm going to be showing you how to
melt chocolate. The most traditional way to melt chocolate is using a double boiler which
is a saucepan that has a bowl that sits right over it. If you
don't have a double boiler, don't worry, you can make your own
substitution by using a heat resistant bowl that fits snugly into the top of the saucepan.
When melting chocolate, you want your chocolate to be in
small pieces so it's easy to use chocolate chips from the bag
because they're ready to go. The next thing you'll do is to add water to your pot. You
wanna fill this so that it comes up almost to the bottom of the bowl
that makes the top portion of your double boiler. Heat your water
until it comes to a simmer but isn't boiling. When your water comes with simmer, turn off
the heat, place the chocolate on top and as the chocolate starts
to melt around the outside edges, then start to stir it. If your
water boils, it's going to have some steam rising above the pan, and as the steam condenses,
water droplets will form falling into your pan. If that happens,
this water causes you chocolate to seize up. So make sure
when you're melting chocolate, all your utensils are absolutely dry. When you're chocolate's
almost all melted, remove it from that heat, place it on the
counter and then continue stirring until all of the chocolate is melted. If you need to
melt a lot of chocolate, it's best to do it in small batches. So
