Dear Friends, welcome to Nooria's Kitchen. I'm happy to be here with you with a new recipe.
Today I will be making a popular Afghan dish called "Haleem"
Its traditionally made with wheat and lamb meat
But You can easily make it with Chicken meat, oatmeal, and sticky rice.
For this recipe, I need the following ingredients:
Chicken Breast (2 Lbs)
Oats (2 Lbs)
Sticky Rice (1 Lb)
Canola Oil (as needed)
White Sugar (as needed)
Whole Onion ( x1 Large)
Cardamom powder
Cinnamon
I start by boiling the chicken, so the chicken meat is tender
I will be boiling the chicken and the sticky rice together
I will be boiling the oats separately
I have boiled some water in a large pot and now I will put the chicken meat in the pot.
Boil the chicken in the water until you see froth forming around the pot and remove the water and add clean water for the second time
Add water in another pot and bring it up to a boil then boil the oats until they are soft
Let the chicken boil for about 10 minutes, and then separated it from the water
Add the sticky rice into the boiling water with the chicken and boil until its tender.
Add a whole onion with the chicken and rice, so it absorbs the smell from the raw chicken
Boil everything for about 20 -25 minutes
I also add a teaspoon of salt
After about 20-25 minutes the chicken and rice are done and the oats have become soft
Now I blend the oats and the chicken meat using a blender
Before you start to blend the chicken and rice, take the whole onion out
Blend everything until it has been thoroughly mixed
You can see the smooth texture when you blend the rice and chicken together
Follow the same step to blend the rest of the rice in the blender
Now it is time for the oats to be blended
Make sure it is blended thoroughly and that there are no lumps left
After blending the rice, chicken and oats to a paste, add it all together in a pot
Add 1-2 teaspoons of cardamom powder
Let it cook for about 15-20 minutes
Make sure you use a heavy duty pot to prevent sticking or overcooking.
Now cover the pot up and let it cook for about 15-20 minutes
Make sure you leave it at a lower temperature
After 20 minutes, the Haleem is cooked and ready for serving.
Now it is time to plate the cooked Haleem
Traditionally, We put bread under the Haleem for serving.
Add the Haleem on top of the bread
Add sugar, if you wish (optional)
You can also substitute for brown sugar
Now add cinnamon on top of the Haleem
Add cardamom powder (optional)
I have heated some canola oil and will add some of it on the Haleem, however it is optional
If you are going to use oil, make sure it is hot!
This is cooked Afghani Haleem
