Hi my name is Brandon Sarkis on behalf of Expert Village. Today I am going to show you
how to make Irish Soda Bread. Now on to the white soda bread. We are just going to take
our dough here, the white dough and take a little bit of flour and flour the bottom of
the pan. We want to put a little flour in it to keep it from sticking even though it
is a nonstick pan with butter in it. We are just going to flour our hands up and pick
up the bread or the dough rather and drop it in the pan. This has a really nice airy
feel compared to the other one. It is not going to come out as dense. You could probably
make this a pretty good size loaf and probably make pretty good sandwich bread out of it,
although it falls apart pretty easily so it has to be pretty thick. At this point I am
wondering why I didn't choose to use a spatula instead of using my hands but there is a train
of thought amongst bakers that you should really use your hands when working with bread.
It is an old school thing. We are going to scrape all the dough off my fingers and get
it back here. I want to get some flour on here and a nice little trick to note here
is that if you have a really sticky dough on your hands you can take flour and start
to rub them together and see how it just starts to come off. It is helpful if you are working
with lots and lots of bread or if you are working in a bake shop. This way if you get
water on your hands you have to dry them off perfectly before you go back in there and
handle anything so you can see how a lot of the dough came off just from running them
through the flour. We are going to take a little more flour here and flour our hands
off and pat the top. As a matter of fact I am going to put just a little more flour right
on top of the bread here because it is not even in the pans. We want to make sure it
is fairly even but it doesn't have to be perfect. It is a rustic type of bread, it is not like
a loaf bread that you would slice up and make sandwiches out of. I'm putting just a little
more flour here on top and finish it off and wipe some of the flour off. Also good advice
is don't wear a ring when you do this because it gets under your ring.
