Today we will make nan khatai.
Nan khatai is traditional cookies of India which are liked by almost everyone.
Nan khatai is prepared by maida
by mixing maida and semolina (sooji),
maida and gram flour
or by mixing all of the three.
Today we will make Nan khatai by adding maida, sooji and gram flour altogether.

Maida- ½ cup
Sooji - ¼ cup
Gram flour - ¼ cup
Powered sugar - ½ cup
Ghee - ½ cup You can also use butter.
Cardamom powder - ¼ tsp
Baking powder - ½ tsp
For making Nan khatai mix ghee and sugar then whisk them nicely.
Whisk until there is a change in color and batter turns smooth.
Now mix baking powder in flour.
Mix maida,
sooji,
gram flour
baking powder in a big bowl.
Also add cardamom powder and mix all ingredients nicely.
You can even strain the flour for 1-2 times so that ingredients mix up nicely.
Now add the flour in sugar-ghee mixture.
We use all the three ingredients in equal quantity for making Nan khatai.
If the batter appears to be dry then add little amount of milk or curd into the batter.
Now we will make Nan khatai from it
Grease baking tray with some ghee.
Take little amount of dough (around 1 tsp) and roll it like this.
Press it gently and place it on tray.
Place the khatai at some distance.
Keep them as it for 10-12 minutes.
Meanwhile preheat oven at 200 degree centigrade.
Now bake the Nan khatai on 180 degree centigrade for 15-16 minutes.
Nan khatai is now ready.
They should be so soft that once kept in mouth they melt easily.
