Hello! Today we're making Rice Paper Spring Rolls.
You'll need a Mango, and bell peppers of your choice, I've chosen Green and Red Bell Peppers,
an avocado and two mini cucumbers You'll also need Rice paper sheets, available
in the asian aisle of your grocery store. Rice paper has a dull rough side and a smooth
shiny side. Always put ingredients on the dull side.
Keeping the length, slice the cucumbers into thin strips. I like mini cumcumbers because
you dont need to peel them
and the length is just right. We'll do the same for the rest of the ingredients.
Try your best to cut them as thinly as possible but be careful when using a sharp knife. Since
avocado is soft - cut it half and slice each section. The goal is to keep the length. This
makes it easier when cutting the spring roll.
Grab a dish wide enough for the rice paper. With the smooth side facing down, Douse the
sheet with hot water and let it sit no longer than thirty seconds. Drain the water
Place some filling towards the bottom centre of the sheet.
And just like you'd wrap a tortilla - fold all three corners. This seals the spring roll,
now all you have to do is roll tightly. Depending on how big the rice paper is, you might need
to cut the spring roll. Make sure to use a sharp knife and cut diagonally from the centre.
Did you know? edible rice paper contains white rice flour, tapioca powder, water and salt.
Also rice is produced on every continent except for Antartica.
There you have it, Rice paper spring rolls. I coulldnt wait to try them. You can eat them
as is or dip them in soya sauce.
