today we will make turai sabzi.
some people don't like eating it but some love eating ridge gourd (turai).
let's see what all ingerdients are required for making turai sabzi.
ridge gourd - 1kg
cumin seeds - 1/2 tsp
asafoetida - 1-2 pinch
turmeric powder - 1/4 tsp
coriander powder - 1 tsp
ginger - 1 inch piece (grated)
salt - as per taste (.45 tsp)
green chilly - 1-2 (finely chopped)
coriander - 1 tbsp (finely chopped)
ghee - 1-2 tbsp
lemon - 1/2
peel the turai first with help of a peeler.
remove stalk from both ends and make small thin pieces.
now we will make turai.
add 1.5 tbsp ghee in pan.
when ghee gets hot add cumin seeds and asafoetida.
after suateing cumin seeds add turmeric powder,coriander powder,green chilly,ginger and turai. saute for 2-3 minutes.
stir nicely so that gourd get coated nicely with masala.
ridge gourd taste tempting in ghee only.
add salt and mix well.
add 1 tbsp water in sabzi.
cover and cook gourd for 5-6 minutes on low flame.
check the sabzi as gourd gets cooked instantly.
cook for 1-2 more minutes.
ridge gourd cooked in ghee and less oil taste very tempting.
sabzi is ready mix green coriander into it.
take out sabzi in a bowl and add lemon juice into it as it gives more flavor to the sabzi.
this much quantity of sabzi can be served to 4-5 family members.
serve turai sabzi with roti, parantha or rice.
