Have you ever tried to prepare a good pasta in bianco?
You might say "what's the point, yak, why should we care?"
but no! no, dear, now I'll explain it to you:
pasta in bianco is one of the most difficult things to do,
because when you have a good sauce, an Amatriciana, a Carbonara,
or Arrabbiata sauce, nice and hot,
or a Carbonara, with egg, bacon, pecorino, so good! oh my, so good,
but that's easy: because if the pasta is not first quality,
if the tap water tastes a bit like metal, or if you haven't salted the water in the right, perfect way,
if you haven't strained the pasta really "al dente", still,
you have that nice sauce, well, it gives such a great taste, it's so good and satisfying anyway,
but you have been cheating a bit, because you have good sauce, so...
on the other hand: try and make a good pasta in bianco: there lies the challenge.
Because the pasta has to be really good, durum wheat, cooked "al dente", I recommend it,
strained in the right way, and I'll tell you why in a sec,
salted in the right way: when you cook a pasta in bianco you always have to put an extra pinch of salt, because it enhances the pasta's flavour.
Salt, though, has to be marine integral salt,
pasta has to be dried in the right way, extruded from bronze casts,
the water has to be a good one, a filtered one, with no flavours of disinfectants...
Then, when you drain the pasta, you should keep it a little watery, because in the meanwhile
you will have very finely grated some D.O.P Parmigiano Reggiano, aged in the right way, you will have put a bed of this Parmigiano in a cup...
oh and the butter, has to be a first quality one, of fresh centrifuged cream...
you will have put a layer of this Parmigiano, finely grated, very important,
you then strain the pasta, nice and "al dente", be careful and don't strain it too much, this is important,
because the Parmigiano absorbs, absorbs, so you then risk to find a goo of glue that will sit on your stomach and be hard to digest,
so the pasta, a bit watery, you put it on this bed of very very finely grated Parmigiano,
you then add the butter which you will have separately bain-marie melt,
and where you can add some sage, if you want, and you start mixing
and then you keep, like rain drops, adding more and more grated Parmigiano,
and when it's all melt, and so perfumed and smoking, not too dry, you eat it, and it's a wonderful thing.
The pasta: not penne, fusilli or whatever, no:
pasta has to be either fettuccine or spaghetti.
You can then add a bit of cracked black pepper: hand-cracked, not a ready one,
and if cracked in a mortar, on the spot, it's even better, as it unleashes a fantastic aroma,
and you eat it, and it's wonderful.
I ate a pasta like that three years ago, in Rome: it's still on my mind.
You might ask: "How does this relate, Maddalena, to sex?"
I'm getting there, it does relate,
because if you have sex while wearing stilettos, transparent stockings, and seductive, sexy lingerie,
and maybe in an unusual place, like in the elevator,
or your garage, while people are passing nearby just outside of it, parking their car,
and you are there and have to be silent, so it's a very *** thing, or in any other odd situation...
in a restaurant's bathroom, or the restrooms of a house where a party is hosted,
where people are having fun, all this is very exciting,
but it's a bit like putting an Amatriciana or Carbonara sauce on a pasta:
I mean, if your partner isn't exactly George Clooney or isn't necessarily very hot,
you still have all this choreography that supports you and is exciting anyway,
but you have been cheating a bit, like with pasta sauces.
On the other hand, SIMPLE sex, is the most difficult thing existing,
with no sexy underwear, with no stilettos,
with no unusual places or situations, with no dirty talking,
just SIMPLE sex,
where there are you, the other person, the attraction
and that's it. AND THAT'S IT!
Then that one, in my opinion, is the most beautiful sex possible,
when there's you, the other person,
your bodies, the attraction, and that's it,
with no fantasies or filming, ***,
bandages, chains, whips, elevators, restrooms, restaurants...
because often sex is an aided ***,
where the other one is just a helping hand,
but you don't notice this thing straight away, you realise later,
when you wonder "How did it happen...? There were all those right things..."
eh, because it's like with white pasta: great quality material,
economy of means, lots of dedication, lots and lots of dedication, and that's it.

Well, I am tonight having a white night,
meaning with no pasta and nothing else either,
but it doesn't matter, I have plenty of hope in the future.
