The term “a mess of greens” can make this wild edible sound less than appealing.
But if you use a little creativity, you can end up with a truly zesty side dish...like greens Italiano.
You’ll need a colander full of a mixture of tender new greens... like poke, mustard or dandelion.
Steam the mixed greens, covered, until they’re limp...
then cut them up, put them in a saucepan, and set them aside.
In a small skillet, cook garlic and chives gently in oil until tender but not browned.
Pour tomato sauce over cooked mixed greens in a saucepan, season with salt and pepper and heat.
Add the oil and herbs, toss well, and serve them up hot.
Whether you’re serving it with ordinary meat and potatoes
