You might have seen “puli” (tiger) in a forest…
or when it's on the hunt.
Some would’ve seen it walking on the streets too.
But, today, Bhavani is gonna extract juice from the “puli” (tamarind)…
and add oats to it.
Bhavani, How’re you?

Alright, what are you gonna cook now?
“Puliyodharai” (tamarind rice)
But not the usual puliyodharai…
Oats Puliyodharai.
Oats Puliyodharai eh?
Sounds very different.
Oats is usually eaten for breakfast.
But, you’re gonna cook oats for lunch.
That’s to stay slim and trim.
But, I’m “slim and trim” only, right?
It’ll prevent cholesterol blockage inside blood vessels.
We can stay healthy, right?
Then I definitely wanna taste.
What are the ingredients to make this puliyodharai?

Since you’re health conscious…
you’ve substituted rice with oats for this puliyodharai recipe.
Yeah, as Indians usually tend to eat more rice…
and end up becoming fat.
So the substitution will make this Indian dish more healthy.
Have you heard of this Oats Puliyodharai, Gayathri?
Nope. I've heard of oats porridge.
But, I haven’t tried puliyodharai using oats.
I’m gonna learn today.

I’m from Chennai, India.
Chennai? Then you must have heard of puliyodharai for sure.
Yeah, I’ve heard about puliyodharai…
which is made using boiled rice.
But, I’ve never heard of Oats Puliyodharai.
Okay, then today, in Kootu…
we’ll see how these two make Oats Puliyodharai.

Now the relationship between “Singapore” and “Chennai”…
is gonna blossom into an awesome Puliyodharai.
Okay, start cooking!
Sesame oil.
Ok, Gingelly oil. Watch carefully!
Small quantity should suffice
Add mustard seeds to the hot oil…
followed by cumin seeds…
some fenugreek seeds
Now, let’s add peanuts.
How much?
A handful
You like it very much, is it?
Yup!
It’s very good for health!
Once this fries well, we’ll add dry chillies and curry leaves.
Nice aroma is coming from peanuts.
Yeah, frying in gingerly oil gives nice aroma.
Actually, sesame oil is very good for health, right?
Yeah, it’s used in Chinese dishes too.
You use sesame oil for all dishes, is it?
No! Normally, I use canola oil.
But, sesame oil is used traditionally for puliyodharai.
Is it?
Yes!
It gives good taste and flavour!
Sesame oil is used for puliyodharai in my native place too.
But, she’s doing it with oats!
Add curry leaves and dry chillies.

We’re getting a very nice flavour.
Let’s reduce the temperature a bit.
Now, we’ll add turmeric powder.
We’ve added all the main ingredients. Let it fry well!
Once it’s fried well, we’ll add tamarind juice and cook.
Make sure the peanuts are well fried.
It won’t taste good otherwise.
Bhavani, I heard you’re from US.
I’m not from US.
I was born and brought up in Singapore.
But, I went to US to complete my Ph.D.
Is it?! So you learnt this Oats Puliyodharai at US.
Yeah. It's hard to find Indian food in US right?
But, you get puliyodharai in Indian temples there.
You don't get oats puliyodharai though.
I used to cook up puliyodharai for my vegetarian friends there.
I made only normal puliyodharai then, using rice.
But, I became health-conscious once I returned to Singapore.
So I started making Oats puliyodharai for my husband.
How do you make puliyodharai?
It’s more or less the same.
But, we dry roast pepper, fenugreek and sesame seeds…
grind them into a powder state and add finally.
That’ll give more flavour to this dish.
But, this is quick and easy, right?
I prefer fast cooking!
We’ve added tamarind juice now!
Tamarind juice has been added!!
How long should this cook?
Cooking this well is very important.
It should cook till the tamarind juice thickens.
Tamarind juice has thickened. What next?
We forgot to add salt. So let’s add it!
You forgot to add salt? What’s food without salt?
Only if we add salt you won’t forget us.
You kept talking and so we forgot the salt.

Next, let’s add oats and mix well.
How come this oats is grainy yet well-cooked?
Add rolled oats and some salt to boiling water…
and follow the same procedure for cooking rice.
