Blitz into an emulsion!

Cut the Peaches into thin slices.
To Assemble the Salad: add Rocket to the plate;
scatter the Proscuitto Cotto;
artfully add add the Peach slices;
drizzle the Dressing made earlier;
season again (if necessary) with Salt & Pepper;
and pile on the Gruyere Cheese Slices.
