We only started making a white wine 3 years ago
We had been thinking about it for a long time but here,
in the South you are not really in a place for whites,
except the Roussillon where vineyards are more in altitude and benefit from cool influences.
Our idea was to choose a variety which can preserve freshness
in a warm climate with summers getting hotter and hotter each year.
Here, we have a slow and a progressive ripening
which favors freshness and vivacity for the wine.
To get a nice finish and a bit more body and complexity in the mouth,
we blended this Picpoul with a bit of Roussanne,
a typical variety of the south of the Rhone Valley
which is planted in some small areas here in the region.
We definitely can find in this Piquepoul blend a specific saltiness character.
At the end of the summer the vines take advantage of the maritime air inlets
and this sea winds even bring some grains of salt on the grapes
this explains this unique iodized touch in this wine.
We are here in Sète, this amazing city, with a 25 centuries history,
this outstanding amphitheatre facing the Mediterranean Sea
and an unbelievable quality of natural products.
We have a magnificent sunshine for the main part of the year,
both allow a perfect ripening for the grapes.
All these products are so remarkably fresh and beautiful,
so tasty that when you enter in the kitchen or in the cellar,
you really are in the best conditions to accomplish great food and great wines.
