Welcome to Koh Pha Ngan. Oh my goodness. Monsoon season
possible monsoon season. My name is Chef Tummy means fat
stomach in North American english. That's my nickname.
My real name is William. I've lived in Tailand for 7 years and
have studied cooking during that time. I've gone all around the
country on my motorcycle trip. See this map, we are here in
Koh Pha Ngan, here is Bangkok, Chiang Mai and so on. I went
on a jolly walkabout just to see what Thai food is like in all the
different areas. Took about a year, then I spent a year writing a
book about it, which I continually revise. The recipies I learned
from all the different areas from the senior chefs; the grandma
the grandpa who make Thai food. I would do kitchen invasions
I would go and say: hi, I'm a fat guy who likes to cook would you
teach me? And they are always extremely generous about
sharing their recipies, no secrets or anything like that.
So at the end of this process, when all the chicken is cooked
you are all going to taste and see what's missing, is it salty
enough. You can add a bit of fish sauce.
Good evening. Do you like my very, very fluorescent getup
tonight? I know, you're pretty impressed. There actually is a
reason why I'm dressed like this. So, tonight is a full moon, and
if you don't know there is this thing called Full Moon parties
that happen here in Tailand, specifically Koh Pha Ngan, which
is where we just happen to be right now. So, a couple of rules:
1, they are huge, ridiculous, I don't even know how and what to
expect, but I've been told that there is going to upward of 25
thousand people there. And 2, you are supposed to dress like
really, really fluorescent. And 3, don't swim in the water
because its going to be gross because there is a lot of people.

done this before. yes we have. Many times.

Full Moon Party 2012.
Light this and be carefull let it burn for a while. This is rice paper
so it can catch on fire very quickly and when you are ready, you
have to hold it like this and you are going to give it a quick little
turn like this and then you can hold it and you'll feel once it fills
with air it's ready to go.
