This is Rachael with Nutrolution in Miami Beach, Florida. In this clip we're learning
how to understand what gluten is. Gluten, spelled g-l-u-t-e-n, is actually an amino
acid, a protein in various grains. It comes in primarily your wheat, your oats, your rye
and your barley, and gluten actually creates sort of that gelatinous sort of structure
that comes in pasta and that comes in bread and sometimes they even put wheat gluten in
things to make it a little bit more textureful. The problem with gluten is that it's actually
an inflammatory protein so when it goes down into the intestines it actually starts to
cause inflammation in the intestines and can lead to numerous health problems. So what
happens is it creates this leaky gut syndrome and allows other proteins to then pass through
the intestines causing systemic inflammation and different problems like fibromyalgia and
autoimmune diseases. So we're going to learn more about some other glutenous items and
this actually is one brown rice pasta that doesn't contain any gluten and I highly recommend
