Hello, I'm Teresa and today we are going to be making a super easy, mouthwatering summer
treat: Cheesecake in a Jar with Grilled Honey Fruit.
These retro, no-bake cheesecakes are topped with grilled Ontario fruits.
And because it's summer, you could grill this outside on the barbeque.
In a small bowl, whisk honey and cinnamon.
Brush the halved peaches with the honey mixture. We're using peaches today, but you can use
whatever is in season -- apricots, nectarines or plums.
Place the cut fruit cut side down on a grill preheated to medium high heat; grill for 5
minutes or until warm and grill marks show.
Let the fruit cool slightly and cut into bite-sized pieces.
Earlier today we made these cheesecakes in a jar by combining crushed vanilla wafers
with lemon juice and placing on the bottom of each jar.
The cheesecake filling was made with whipped cream, cream cheese, icing sugar, lemon juice
and vanilla; then refrigerated for 6 hours, or until firm.
Spoon the fruit on top and drizzle with any remaining honey-cinnamon mixture.
And if you love Ontario berries they make a delicious topping too -- no need to grill them, just
toss with Ontario honey to taste.
