Hi I'm Lori Schneider from Austin, Texas and owner of Figs Catering on behalf of Expert
Village we are going to show you how to make vegetable spring rolls with a Thai peanut
sauce. So now we are going to add another important part of our Thai peanut sauce and
that is ginger. And here we got a beautiful bowl of fresh ginger that we are going to
use today and ginger is such a great flavor and you can use dry ginger if you like it
does not get near the flavor or the complexity that the fresh ginger will give you. So I
got a good size bulb and just for sake of times I'm just going to go ahead and use my
knife and cut off the skin. The skin is inedible, now you can do this with a spoon and get a
little bit more yield out of your ginger but today we are just going to cut it off. It
has such a nice fresh flavor and smell and you would be really able to taste it in our
sauce and it is just going to be just wonderful.
