Today we are going to make khatta dhokla using urad dal and rice.
This dhokla is very tasty and nutritious.
It is a gujarati dish.
We can make khatta dhokla and eat it in the morning as breakfast or during the evening as snacks.
So come, let’s start making khatta dhokla.
Batter of urad dal and rice - 2.5 cup
Curd - ½ cup
Green coriander leaves (Hara dhaniya) - 2-3 tbsp (Finely chopped)
Oil - 3 tbsp
Curry leaves - 10 to 12
Green chilli (Hari mirch) - 1 (Finely chopped) (You can also take green chilli paste)
Ginger paste - 1 tsp
Salt - ¾ tsp or as per taste
Mustard (Rai) - ½ tsp
Eno fruit salt - ¾ tsp
To make khatta meetha dhokla, first we’ll put the masala in the batter.
Grease a plate with oil.
Spread the oil evenly on all sides to make it smooth.
Grease the plate properly.
Take a batter of urad dal and rice.
Prepare the batter in the same way as the idli batter.
Take ¾ cup rice and ¼ cup rice.
Soak them in water for 3-4 hours and then grind them.
After grounding, pour the batter in a bowl and keep it in a warm place.
The batter will ferment in 12-14 hours.

Add ginger paste, green chilli and salt to the batter.
Add 2 tbsp oil to the batter, this will make it soft.
Mix it well.
Turn on the flame.
Our water is hot.
Add curd to the batter. Mix it thoroughly.
The curd that we have taken is quite fresh but if you are taking old curd then you don’t need to add lemon juice.
Now add eno fruit salt to make it extra spongy.
Keep stirring.
Now pour the batter on the plate.
For making dhokla, we should either use a proper dhokla maker or any such utensil in which our plate fits easily.
We have taken this utensil.
Place a wired stand inside the utensil and put the batter plate on top of it and cover.
Cook the dhokla for 18-20 minutes.
20 Minutes are over.
Let’s check the dhokla.
The dhokla is quite fluffy and it does not stick.
Take out the plate from the utensil and let it cool.
Our dhokla is cool, so now let’s cut it into pieces.
Cut it into pieces of your choice.
We are cutting square pieces.
Now let's prepare a tadka for the dhokla.
Heat a pan and add oil to it.
Add 2 tbsp oil to it.
Add mustard seeds and curry leaves to the pan once the oil is hot.
Now put this tadka on top of the batter and spread it on all sides.
If you do not like too oily food, then add crushed black pepper and red chilli.
Still the dhokla will taste good.
But the taste of dhokla increases once the tadka is added to it.
Put a little coriander leaves on top.
This khatta meetha dhokla is now ready.
Khatta meetha dhokla can be served with green coriander chutney or chilli sauce.
