Hi everyone. I'm Bob Moore, founder of Bob's Red Mill, and I am so proud of the product
I have here—Bob's Red Mill Gluten Free Quick Cooking Oats. These oats are unique in two
important ways. First, they are a whole grain food that cooks in just 5 minutes—and that
is really something special. Many manufacturers remove some of the bran from their oats in
order to make their oatmeal cook more quickly. Not Bob's Red Mill! Our quick cooking oats
are whole grain, with none of the nutritious bran removed. That's right—the whole oat
kernel goes into this oatmeal. Look, I'll show you. This is the oat groat—the whole
grain kernel. And in this bowl we have steel cut oats—just oat groats that have been
cut into three pieces each. And here are the quick cooking oats—these are made by lightly
steaming steel cut oats, then passing them quickly through two large steel rollers which,
flattening each piece into a familiar "oatmeal" flake. Then the rolled oats are kiln toasted
to dry them and impart a delicious, nutty flavor. This unique process—first cutting
the groat into pieces, then steaming, rolling and toasting it—makes oats that cook quickly
without sacrificing whole grain nutrition. The second thing that makes Bob's Red Mill

are a naturally gluten free grain—but they often become contaminated with gluten. How
does that happen? Well, it is a common farming practice to rotate oat crops with crops like
barley and other gluten-containing grains. When the oats grow up in the field, so does
some of last year's barley crops. The volunteer barley is harvested along with the oats, and
all that—gluten included—goes into a package of typical oatmeal. For years this risk has
meant oats were off limits for people with celiac disease or gluten intolerance—but

farmers who are committed to growing oats exclusively—no wheat, barley or rye—so
