With a healthy deer herd and increasing limits during hunting season, venison has become a staple in Missourians’ diets.
But instead of just cooking it the usual ways, have a little fun with it!
Today, we’re cooking venison quesadillas with fresh fruit chipotle.
A fun and attractive dish that’s healthy, simple to make and adds a little spice to your diet!
Add venison strips to a mixture of lime juice, garlic, cumin, salt, pepper and Worcestershire sauce
and let it marinate for 30 minutes or longer.
Saute the venison in a small amount of oil until nearly done then add onion and pepper and cook slightly.
Set the meat aside while you build the quesadillas.
Place cheese on half of a flour tortilla, and add some of the meat mixture.
Top with fresh cilantro and other favorites...such as tomato, black beans and corn.
Fold the tortilla over and grill on both sides until golden and warmed through.
They’re served with fresh fruit chiptole... which is very easy to make.
I like using a fresh fruit that’s in season, like strawberries. You can also use frozen fruit, if you like.
Chop the fruit, add garlic, cilantro, lime juice, salt, cumin and chipotle pepper and stir.
