Today I teach mango pancake
beat 2 eggs (L)
add in 20 grams icing sugar beat til dissolved
add 3 tbsp milk stir together
add 40 grams sieved flour
100 ml milk ( put in 50 ml first )
pour in the remaining half of the milk
put in the egg mixture stir together
add a pinch of salt
1/3 tsp vanilla extract
2 tsp vegetable oil, stir together
filter out glob
cover with big plastic wrap, put in fridge for 30 mins
30 mins later, hot 26 cm pan then turn to low heat
use paper soaked with vegetable oil
spread thin oil in pan
stir well the batter
pour some batter ( around 1 soup ladle )
fry 2 to 3 mins
3 mins later, use a wood stick gently scrape the side
take it out with 2 wooden spoons, put pancake on the rack
use plastic wrap to cover the pancakes
same procedure on the other pancakes
cover with plastic wrap to chill
wash and cut a mango, scrape with a spoon
cut in 3 stripes
beat 200 grams fresh cream til creamy
2,5 tsp vanilla sugar add in 20 grams icing sugar
slowly add the sugar mixture in, beat till stiff
pancakes are cold now, put some fresh cream on fried side
2 mango stripes, some more fresh cream on top
