hello, welcome to the "Mütevazi Lezzetler" video recipes part
in this section we will share a salad recipe...
which is very delicious and is belong to Adana of Turkey,
"Sögürme"
but firstly ingredients
3 plump eggplant
3 Charleston pepper
2 tomatoes
3 cloves garlic
6 tablespoon olive oil
and 1 teaspoon salt
we have just learned the ingredients for "sögürme"
let's immediately see how we will prepare it,
we are using a wrapping paper resistant to oil or grease,but it can be used foil paper
it can only be cooked on a wood fire
our purpose is to make ember
we are making ember in oven to take it easy
we are packing beautifully like this
we put them onto the baking tray
we will pack like this the eggplant, tomato...
and pepper respectively and make ember them
if you remember our older recipes we had made them ember on the burner
now we drive the tray in the oven which is heated to 210 degrees...
and we cook them approximately for 30 minutes
after an hour
eggplant, tomato,pepper became ember
we removed them from oven,and wait them to be cool approximately for 30 minutes
now we will peel them and obtain insides to mince
you know we had shown before ,there is an easy technique
we split away and we remove by spoon
yes,now we will take again and mince wispy
we have minced completely
again take them to our bowl
now it is the turn of tomato
lets peel the tomato
and we mince like eggplant
we will do the same thing for the other tomato
it is the turn of peppers
it is up to you if you peel the peppers of not
first remove the inside of pepper
and mince them
so we have got the peppers too
now add peppers onto the tomatoes and eggplants
we beat the garlic in a mortar you can paste them as you wish
because we want them lose their shapes
we beated them with some salt
the salt should be little
let's mix them
finally we add the olive oil
mix a little bit
all the ingredients are mixed so we take it to the platter
it is also good becoming lukeworm
but you can servis however you wish

"sögürme" can be made with minced meat in Gaziantep and Antakya
there are different tastes of each locale
