2-3 tbsp oil.
We all love watermelon, we eat it’s pulp and throw away the outer part.
If we use its covering and make its sabzi it’s very tasty.
It is a specialty of Rajasthan!
Few outer covering of Watermelon.
2 tbsp green coriander.
½ tsp ginger paste.
1-2 chopped green chillies.
1 pinch Asafoetida.
¼ tsp cumin seeds.
Less than ¼ red chilli powder.
Less than ¼ tsp mixed spices.
¼ tsp turmeric powder.
¼ dried mango powder.
1 tsp coriander powder.
Less than 1 tsp salt (according to taste)
We will peel off the dark peel and cut the rest of the part.
We will peel it off because it is very hard to cook.
Cut the rest of the green pulp into very small pieces.
Do the same with the rest.
We have cut them all.
We have taken these thick peels from a 3kg watermelon.
This is around 500 grams.
Now, we’ll make the sabzi.
The oil has heated add cumin seeds, green chillies, Asafoetida, coriander powder, turmeric powder , ginger paste and the pieces of water melon peel.
Add salt, red chilli powder and mix it for 2-3 minutes and make it light brown.
The spice coating is very nicely done in the sabzi.
Now, add ¼ cup water and cover it and let it cook for 5-6 minutes and check it.
Check the sabzi now.
Mash the pieces, see if it’s cooked or not.
The pieces have become soft.
We had cooked it for 5 -6 minutes but if it’s not done even then cook it again for 5 minutes and check.
We saw that there was less water in the sabzi then added water in it.
We checked the sabzi in every 5-6minutes.
It took 25 minutes to cook the sabzi.
Now add mixed spices, dried mango powder and fresh coriander.
We add this later so that its essence & smell remains for a while.
Our sabzi is ready, put it in a bowl.
If you want to make ir quickly you can make it in the cooker, add ½ cup of water.
Cook it till one whistle blows and dim the flame and let the sabzi cook for some more time.
Then again add green coriander, dried mango powder and mixed spices to it and mix it.
Garnish it with green coriander.
The sabzi is ready now and is very tasty.
You can serve it with chapatti, paranthas, naan and rice.
This can serve upto 4-5 people.
