Preheat the oven to 180C. Peel the Garlic cloves and chop. Transfer to a small bowl.
Add the Olive Oil and Lemon Juice.
Add Kale to a large tray and drizzle with the Oil, Lemon and Garlic mixture.
Transfer the tray to the oven (preheated to 180C) for 5min - top shelf.
Add Walnuts to a tray and transfer to the oven for 15min - bottom shelf.
Slice the peel off the Pink Grapefruit and slice into cubes.
Take the Kale out of the oven and toss to mix and then transfer back into the oven for another 5min.
Slice the peel off the Orange and slice into cubes.
Take the Kale out of the oven again and toss to mix and then transfer back into the oven for a final 5min.
After the final 5min (15min in total) take the Kale out and transfer to a plate.
Add the Pink Grapefruit and Orange cubes.
Add the Gorgonzola (that you have roughly cubed earlier).
Add the Roasted Walnut pieces.
Serve!
